Tagliolini with Squid and Shrimp

Well it’s unofficially summer, and I’m OFFICIALLY declaring 2018 the Summer of Pasta. I’m not talking about the dried stuff from the box, though that serves its purpose and I love it. I’m talking sheets of fresh pasta, cut into fettucine and tagliatelle, or extruded into fusilli and bucatini. Or rolled and stuffed with all kinds of delicious stuff (artichoke hearts, anyone?). Or hand-formed ravioli or tortellini. Rounding out my carb-filled pipe dreams, I also have a family trip to Puglia planned in early July, so I fully intend to take rustic Grandma-style eating to the next level.

Shrimp à l’Américaine

Since it’s going to be awhile before I’m chewing my way through steaks, pork chops, spare ribs and even fried chicken, I’ve been really maxing out on seafood for some much-needed protein. My first weekend on solid foods included both my favorite pot of mussels and this delicious shrimp, which was a huge hit and is going straight into my rotation of go-to dinners.

Mussels with Cava and Roasted Carrot Romesco

There’s something so celebratory about a steaming pot of mussels, right? To me, mussels are something you eat at a dinner party or a great French restaurant, even though they’re honestly one of the easiest and most rustic dishes a person could possibly prepare. I think it’s the magic of them that makes them special- opening the lid and seeing all the shells open and looking up at you, rolling up your sleeves and getting down to business, slurping the juices out of the shells and generally relying on all of your baser instincts, surrounded by a bunch of people doing the same.

Crispy Soft-Shell Crab with Chili Glaze and Mint Coleslaw

Nothing exemplifies summer eating quite like seafood – I’m thinking lobster rolls, fried calamari, octopus ceviche, a pot of steamed mussels eaten al fresco, shrimp po’boys. I could go on with this seafood word association but will spare you. I’d earmarked this recipe for a Cajun-style fried soft-shell crab some time ago but  was totally sold when, during my weekly shopping extravaganza at the 75th St. Fairway Market, I saw that soft-shell crabs were on sale. I’m confident cooking most seafood (octopus, squid, mussels) but was a little apprehensive having never tackled crab before.
