Salted Butter Caramel-Chocolate Mousse

When my sister and I were little, my mom had a catering business (Zisa’s Catering RIP), which no longer exists but is forever memorialized in logo aprons we all still have. She ran this little operation out of our basement, which was not exactly finished but did contain a second kitchen, and from this subterranean headquarters she churned out many delicacies, the most regionally famous of which was her chocolate mousse cake. Many of my fondest childhood memories center around eating crushed chocolate cookies (used for the crust) and licking chocolate mousse streaks out of bowls (or off beaters- my sister and I always each got one). You could say I’ve always had chocolate mousse running through my veins.

Marbled Mint-Chocolate Pudding

The afternoon I came home from the hospital after my second jaw surgery, I spent several hours watching The Great British Baking Show Masterclass, in which Paul and Mary adorably create their own (perfect) versions of the various challenges they gave the bakers that week. Comfortably loaded up on Percocet, after watching Paul masterfully create a walnut-roquefort bread, I decided that in 2018 I would become a master bread maker.

Baked Custard-Style Rice Pudding

Already dug in

The state of the world, you guys. It’s been hard enough to justify doing my actual work these days, because somehow putting together a narrative as to why a deal between ABC company and XYZ company makes strategic sense just doesn’t seem very important in the grand scheme of things. Never mind finding it in me to wax poetic about some really great food I made when people in this country (and those unfortunately now stuck in limbo outside of it) are fearing for their futures. But in between phone calls to the full mailboxes of my elected officials and typing my credit card number into the donations pages of the ACLU and the IRC, I’ve got to keep on moving. Mincing garlic, stirring rice, kneading dough.

Fried Apples with Bourbon Caramel

Apple pie, hold the pie

Fall seems to have arrived this year when I wasn’t looking. One day I was drenched with sweat on my way to work and the next I was tearing through my winter storage under the bed to uncover some much needed tights. No thanks to a pretty insane schedule, the floor of my room is still covered in things like jackets and vests, and the cat has taken to nesting between two unmatched boots. But hopefully you’re participating in more traditional autumn activities, like shamelessly ordering pumpkin spice lattes, picking out a Halloween costume or going apple picking. Which brings me to this recipe.
