XO Daikon Cake (Bebinca de Rabano)

On Friday morning I’m taking a car to Newark Airport and getting on a plane, where I will remain for 14 hours and 45 minutes until I arrive in Mumbai, at which point I will wander in a daze for 4 hours before boarding another plane, where I will likely fall asleep for an hour and 45 minutes before arriving in Goa around 5pm local time on Saturday. It is my first real solo trip and I decided to go big.

Korean Stir-Fried Sweet Potato Noodles (Japchae)

I had an unplanned hiatus from the blog for the past couple of weeks for a number of reasons, including a big project at work, a stomach flu and unplanned technical difficulties. In a bizarre foreshadowing, about three weeks ago my colleague and friend remarked that my the laptop’s desktop was a real disaster (she may have used stronger language) and that if my computer were to crash, I’d be very sorry. Exactly one week later when my laptop crashed, I was indeed very sorry. After some initial panic, it all looks like it’s going to be okay, but I have learned my lesson. I think.

Greek Baked Mushroom Casserole (Giouvetsi me manitaria)

I know it’s not polite to brag, but I have been cooking the most delicious dishes lately! I’ve practically been giving myself physical pats on the back when I pull yet another magnificent thing out of the oven. I’ve also been feeling more on top of my home life than I have in a really long time. Case in point, this weekend I spent 8 hours (with full help from my most dedicated friend) wallpapering a single wall (with a window and several cut-outs) in my room. It’s non-refundable wallpaper I ordered approximately 3 months ago before realizing that this was probably more trouble than it was worth. And it probably was! My index finger is sore from overuse of a box cutter, and there were several times that I fully intended to just quit and throw $500 in the garbage. But I persevered, and now the wall behind my bed is covered in a very large tropical palm print. I’m into it.

Mexican Mushroom and Potato Salad

The temperatures haven’t risen out of the mid-60s besides two freak days a couple of weeks ago, but I don’t care if it’s too soon- I’m declaring it salad season.

It’s also running season, now that I can venture outside without four layers and my face getting unadorably wind-chapped. In fact, I’ve already managed to create a full-on racerback tan just in time for a wedding I’m attending on Friday in a backless dress. One of my favorite ways to “do the weekend” – and this should come as absolutely no surprise to those who know me – is to figure out the most efficient way to tackle my to-do list. Often, this means mapping my running route around things I need to get done.
