Lemon Pistachio Cake

I feel pretty strongly that it’s important to have in your culinary repertoire at least a handful of simple cakes that you could easily pull together at a moment’s notice. Cakes requiring about an hour to create and containing pantry ingredients, maybe some citrus, maybe some nuts, maybe a fruit you have on hand like an apple. I can’t really remember the last time I baked a layer cake or anything that involved (maybe it was this red velvet?) but I make these “snacking cakes” pretty often (as a way to really just challenge my own self-discipline, almost always to my detriment)- bundt cakes, pound cakes, olive oil cakes, etc. This is one is tart, nutty and buttery – and one of my favorite takes.

Squid and Fennel Pasta with Lemon and Herbs

In another episode of gun-jumping I just could not wait to get this absolutely delicious, super simple summer pasta dish on your radar. After all, we only have 57 days until the summer equinox and it’s flying by fast. This recipe is another rarity that I’ve made more than once and it’s special because it’s delicious and beautiful enough for company, but easy enough to whip on a Thursday evening after work when the sun is still out at 8pm and you decided to have a few friends by for cocktails and dinner. Am I getting ahead of myself? I’m just so excited for the warmth of the sun.

Carrot Polenta Cake with Marsala

Bon appetit!

I absolutely adore carrot cake – the kind with a heavy slather of cream cheese icing across the top in an icing-to-cake ratio that’s absolutely obscene. But obviously this kind of decadence is really only socially acceptable to indulge in on special occasions, and I don’t always want to end a big meal with a huge dessert that pushes me fully into a food coma. When I think of the perfect dessert to end a meal, I want something that’s a bit light, not too sweet, and pairs well with an espresso. This recipe combines an olive oil cake base with shredded carrots to create the perfect companion to your after dinner coffee.
