Bulgur and Chickpea Salad (Safsouf)

Last week I had a really profound experience lunching at St. John in London. The restaurant, established by Fergus Henderson in 1994, is a city institution and unapologetic homage to British food, which is often overlooked and underrated. It was a life-changing meal for me for a few reasons. First, because it was a place I’d been itching to visit for a really long time, and it lived up to the hype. Second, because it forced me to think about how we eat meat- the parts we consider prime and the parts we waste (I ordered ox heart and it was absolutely delicious, very lightly seasoned, sliced paper-thin and served with chips). And lastly, because it made me appreciate the beauty of simple food.

Roast Potatoes with Lemon and Cilantro (Batata Bel Lamoun Wal Cosbara)

I love a recipe, probably a lot more than your average Joe. I like method, and measurements and following rules (I’m an ISTJ so this makes total sense if you’re as into personality types as I am). But even I know that there are certain things that don’t require a recipe because they are intuitive. Like cooking rice, or roasting stuff. Every week I roast a ton of vegetables which I eat with a grain for my take-to-work lunches. This includes potatoes, which are arguably the simplest vegetables to roast that exist. And yet, I saw this recipe and decided to try it – and now I can never go back to my ho-hum “winging it” potatoes.

Right at the top of the list of things I never, ever cook is chicken breast. It’s also something I never, ever order if there’s a choice between other parts of the chicken. Why ever choose the breast if you could have a juicier (and cheaper!) thigh or drum? But recently, my world momentarily came apart when I decided to cook this chicken breast and couscous recipe from a tome on Lebanese cooking.

Grape Leaves with Lemon

On Sunday night, I returned, exhausted, bedraggled and wanting to burn everything in my suitcase, from Russia. This week I am showing up at the office as only a jet-lagged shell of my former self, and then moving to a new home on Saturday, because that’s precisely what the doctor ordered. Needless to say, I’ve got a lot going on, and I thought that because of that another week would go by without a blog post. But today I found myself really pondering the lessons learned on this trip and how that relates to food, and so here I am, back earlier than expected.
