Broiled Vegetable Salad

Is there any cuisine more synonymous with summer eating than so-called “Mediterranean food”? Probably not, I think.  There’s something about the abundance of eggplant, tomato, zucchini – everything accented with lemon – that really makes you feel like popping open a bottle of cold and bracing white wine and enjoying the sunshine. Also- grilled everything. Nothing says summer like char, right?

Roast Eggplant and Walnut Dip

Ready for some dipping

Let’s just say I went on a late summer / early fall dip bender. I kept finding myself with leftover produce from recipes I’d made, and because the idea of crunching through an undressed carrot wasn’t exactly inspiring me, I’d instead whip up a Sunday afternoon dip. I made a number of dip variations during this time, from different bases (vegetables, sour cream, feta cheese) and different regions around the world (the American South, Greece, Iran) with varying degrees of success. Now, one of my favorite vegetables and foods to eat in general is eggplant, so when I found this Paula Wolfert recipe for a smoky Turkish eggplant dip, I knew I had to try it alongside some stuffed bell peppers I was making for dinner.

Green Curry with Fish and Eggplant (Kaeng Khiaw Waan)

I have to apologize because I have been sitting on this incredible recipe for almost a year. See, I kept waffling on whether or not to post it because I didn’t really take any photos of the finished product, besides the one shown here, which is the curry on the table before it was devoured by me and a few friends I had over for dinner. But in the end, I decided that even without the right photos, I needed to sell you on making this Thai green curry with eggplant and fish balls, because it’s pretty life changing (culinarily speaking).

Eggplant Agrodolce

The weather we’re having in the northeast has really put a damper on my cooking game. The frigid weather, near-constant snow falling out of the sky and the dirty and slippery sidewalks make me want to sit under a blanket in my badly-heated apartment and never get up, never mind leave the house. In order to not go stir-crazy, I’ve managed to do a complete organizational overhaul of my home (inspired by Marie Kondo’s book The Life-Changing Magic of Tidying Up) so that it now looks like a minimal but highly neurotic individual (right on!) lives there.
