Chewy Molasses Cookies

Every year around this time I find myself falling into the same pattern, the one where I lose focus for one second and it goes from being Labor Day to Christmas Day in the blink of an eye. At that point, I look around and wonder why I didn’t make cookies this year, or appropriately compile a Christmas list or do a thousand other festive things I’d definitely planned to do but failed to allocate time for. This year, I have a packed schedule for the next 6 weeks that includes: hosting Thanksgiving for the first time, taking a 6-day trip to London in early December and organizing a festive dinner party for 10 in the middle of the month, on an ever-tricky Friday night. And I’m determined to do it all.

Oatella Cookies

Sometimes – many times, even – the answer is simple, and it’s making cookies. Boredom, celebrations, snow days, really sad days, wanting to thank someone, or show that you care about them – they’re all situations that baking an easy batch of cookies can probably improve. I’m not trying to suggest we can solve the world’s problems with cookies, or that we should all be eating our feelings more often. Instead, I feel like it’s the act of baking cookies – a ritual many of us have been performing alongside our parents or grandparents since we had to stand on a stool to reach the countertop – that brings the most joy and calm and can usually put a smile on my face no matter what.

Dark Chocolate, Pistachio and Smoked Sea Salt Cookies

For me, baking is less about the end game than it is about the journey. Of course, I have a serious sweet tooth and love the satisfaction of eating something delicious that I made myself. But I also get a lot of joy just out of the process of baking. I love precisely measuring all of the ingredients. I love licking the bowl (eggs and all). I love indulging all of my compulsive tendencies and weighing spoonfuls of batter so that every cookie is exactly the same size. In fact, the only thing I don’t love about baking is that I don’t have the metabolism of a 12-year-old and self control was never my strong suit, and I can’t have 48 cookies lying around the house afterwards.

Almond Crescent Cookies

Perfect with your tea or coffee

I know it looks like I’ve vanished, but something had to give. On top of the predictably unpredictable December insanity at work (a December IPO? The audacity!), I managed to plan a holiday party which, of course, I unwittingly scheduled at the end of one of my worst weeks on record. I honestly wasn’t sure I’d be able to pull it off, but with a detailed minute-by-minute spreadsheet (thanks, PR world, for the rollout training), a trusty co-hostess, label writer and furniture arranger extraordinaire, and a heavy dose of willpower (and undereye concealer), I did it – and I’ve got all the recipes to show for it.
